Every sake buyer has had this experience: You have an excellent sake at a restaurant and immediately go to a store and buy the same brand, but at home it just isn't as good. Often, the problem lies with the store. Some stores fail to keep their sake away from direct sunlight or sources of heat. Avoid these stores. The trick to enjoying good sake is to buy only from knowledgeable sellers who store their sake properly in a cool cellar or refrigerated storage room. Although hard to find in the U.S., liquor stores with a qualified "sake advisor" on staff can be found in Japan, where there are even sake specialty shops that feature brands from all over the country. Some sake breweries even sell directly to consumers over the Internet. Buy with confidence from stores that keep their sake inventory refrigerated. For long-term storage, however, a cold, dark location is even better, as sake stored at the right temperature and the right humidity will keep for many years.
